Instructions

In a bowl, whisk together peanut butter, soy sauce, lime juice, brown sugar, grated ginger, minced garlic, and red pepper flakes. Reserve about 1/4 cup of the sauce for serving. Add chicken pieces to the remaining sauce and marinate for at least 15 minutes.

Thread marinated chicken onto skewers. If using wooden skewers, soak them in water for 30 minutes prior to prevent burning.

For coconut rice: Combine jasmine rice, coconut milk, and water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until liquid is absorbed and rice is tender.

Preheat grill or grill pan to medium-high heat. Cook chicken skewers for 3-4 minutes per side, or until cooked through and slightly charred. Serve chicken skewers over coconut rice, drizzled with reserved peanut sauce and garnished with fresh cilantro.
