Ingredients
- 1.5 lb Brussels sprouts
- 2 tbsp Olive oil
- 0.5 cup Pecans, chopped
- 2 tbsp Maple syrup
- 1 tsp Dijon mustard
- 1 tsp Apple cider vinegar
- Salt
- Black pepper
Instructions
Preheat oven to 400°F (200°C).
Toss Brussels sprouts with 1 tablespoon olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and caramelized, shaking the pan half way through.
While sprouts are roasting, make the pecan crunch: Heat remaining 1 tablespoon olive oil in a small skillet over medium heat. Add chopped pecans and toast for 2-3 minutes until fragrant.
Stir in maple syrup, Dijon mustard, and apple cider vinegar. Cook for 1-2 minutes until liquid is absorbed and pecans are coated and glossy.
Once Brussels sprouts are roasted, transfer them to a serving bowl.
Sprinkle the maple-pecan crunch over the top and serve immediately.
