Ingredients
- 2 Chicken Breasts
- 4 oz Mozzarella Cheese
- 2 Roma Tomatoes
- 0.25 cup Pesto Sauce
- 1 tbsp Olive Oil
- 2 tbsp Fresh Basil
- Salt
- Black Pepper
Instructions
Slice chicken breasts horizontally to create two thinner cutlets from each, or pound them to 1/2 inch thickness. Season with salt and pepper.
Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken and cook for 4-5 minutes per side, until golden brown and almost cooked through.
Reduce heat to medium-low. Top each chicken cutlet with two slices of tomato, then two slices of mozzarella cheese.
Cover the skillet and cook for 3-5 minutes, or until cheese is melted and bubbly.
Remove from heat. Top each chicken breast with dollops of pesto and fresh basil. Serve immediately.
