Ingredients
- 1 Frozen puff pastry sheet, thawed
- 0.5 cup Unsalted butter
- 0.75 cup Brown sugar, packed
- 1 cup Diced fresh peaches
- 2 tbsp Bourbon
- 1 tsp Ground cinnamon
- 0.5 cup Pecan halves
Instructions
Preheat oven to 375°F (190°C). Lightly grease a 9-inch square baking dish.
In a saucepan, melt 1/4 cup butter over medium heat. Stir in brown sugar, peaches, bourbon, and cinnamon. Bring to a simmer and cook for 5 minutes, stirring occasionally, until slightly thickened. Pour this caramel mixture into the prepared baking dish, spreading evenly. If using, sprinkle pecans over the caramel.
Unroll the thawed puff pastry sheet onto a lightly floured surface. Spread the remaining 1/4 cup softened butter evenly over the pastry.
Starting from one long edge, tightly roll up the puff pastry into a log. Cut the log into 9 equal slices.
Place the slices cut-side down on top of the caramel mixture in the baking dish. Bake for 25-30 minutes, or until golden brown and bubbly.
Immediately invert the baking dish onto a serving platter. Let sit for a few minutes to allow the caramel to drip down, then lift the dish and serve warm.
