Ingredients
- 1 cup Orzo pasta
- 2 cup Cherry tomatoes
- 8 oz Feta cheese block
- 0.5 cup Kalamata olives
- 3 cloves Garlic
- 1 tsp Dried oregano
- 0.25 cup Olive oil
- 2 cup Vegetable broth
- 0.25 cup Fresh basil
- Salt
- Black pepper
Instructions
Preheat oven to 400°F (200°C).
In a 9x13 inch baking dish, combine uncooked orzo, halved cherry tomatoes, halved Kalamata olives, minced garlic, dried oregano, and olive oil. Stir to combine.
Place the block of feta cheese in the center of the pasta mixture. Pour vegetable broth around the feta.
Bake for 25-30 minutes, or until the orzo is tender and most of the liquid has been absorbed. The feta should be soft and slightly golden.
Remove from oven. Gently mash the softened feta into the orzo mixture with a fork, stirring everything together until creamy and well combined. Season with salt and pepper to taste.
Garnish with fresh chopped basil and serve hot.
