Ingredients
- 1.5 lb Boneless, skinless chicken breasts
- 1 tbsp Olive oil
- 1 tbsp Butter
- 1 tbsp Chopped garlic
- 0.25 cup Red onion, diced
- 0.5 cup Sun-dried tomatoes, chopped
- 2 tsp Italian seasoning
- 2 cups Heavy cream
- 1 cup Chicken broth
- 0.5 cup Shredded Parmesan cheese
- 1 tsp Basil concentrate, plus more to taste
- 16 oz Penne pasta
- to taste Seasoned salt
- to taste Garlic powder
- to taste Black pepper
- to taste Meat tenderizer, optional
Instructions
Optional: Lightly coat the chicken breasts with meat tenderizer and let them sit for about 30 minutes. Rinse the chicken and pat dry before seasoning.
If the chicken breasts are thick, slice them in half horizontally to make thinner pieces. Season the chicken with seasoned salt, garlic powder, and black pepper.
Cook the penne according to the package directions. Drain and set aside.
Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium-high heat.
Add the chicken and sear for about 3 to 4 minutes per side, until nicely browned. The chicken does not need to be completely cooked through at this point because it will finish cooking in the sauce. Remove the chicken from the skillet and set aside.
In the same skillet, add the diced red onion, chopped garlic, sun-dried tomatoes, and Italian seasoning. Sauté until the onion begins to soften and the garlic is fragrant.
Add 1 cup chicken broth and stir, scraping up the browned bits from the bottom of the skillet. Reduce the heat to medium-low and let the mixture simmer briefly.
Stir in 1 teaspoon basil concentrate. Taste and add a little more basil concentrate if desired.
Pour in the heavy cream and stir to combine. Let the sauce simmer gently for a few minutes so the flavors blend and the sauce begins to thicken.
Stir in the shredded Parmesan cheese until melted and incorporated into the sauce. Taste and adjust the seasoning if needed.
Return the chicken to the skillet and spoon the sauce over the chicken. Continue cooking gently until the chicken is cooked through and the thickest part reaches an internal temperature of 165°F.
Serve the Marry Me Chicken with the cooked penne. Spoon the creamy sun-dried tomato sauce over the chicken and pasta and top with additional Parmesan if desired.
