Instructions

In a large skillet over medium-high heat, cook Italian sausage, breaking it up with a spoon, until no longer pink and browned. Drain any excess fat and remove sausage from the skillet, setting aside.

Add olive oil to the same skillet. Add minced garlic and chopped sun-dried tomatoes, and sauté for 2 minutes until fragrant.

Pour in heavy cream and chicken broth. Bring to a gentle simmer, scraping up any browned bits from the bottom of the pan. Cook for 3-5 minutes until the sauce slightly thickens.

Add the potato gnocchi to the simmering sauce and cook for 3-4 minutes, stirring occasionally, until the gnocchi are tender.

Stir in the fresh spinach a handful at a time, allowing it to wilt into the sauce. Return the cooked sausage to the skillet.

Mix in the grated Parmesan cheese. Season with salt and pepper to taste.

Serve immediately, garnished with additional Parmesan cheese if desired.
